Chocolate Roll Cake

If you are insisting on getting somebody a cake for their birthday or having a cake for your birthday on the ketogenic diet, you might be surprised to know that there is at least one cake that you could bake that could be an excellent choice. A chocolate roll cake is similar to a roll cake that you might get on your birthday and it's actually a fairly simple recipe that is keto friendly too.

The main ingredient for this recipe is eggs and these can add some much-needed protein into your diet as well as vitamin B2, selenium, vitamin D, B6, B12 and a series of minerals like copper, iron and zinc. Eggs are an excellent staple of the ketogenic diet and a wonderful base for a keto friendly cake.

Ingredients:

Chocolate Roll Cake

  • 1 cup almond flour
  • 4 tablespoons butter, melted
  • 3 large eggs
  • ¼ cup psyllium husk powder
  • ¼ cup cocoa powder
  • ¼ cup coconut milk
  • ¼ cup sour cream
  • ¼ cup erythritol
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder

Cream Cheese Filling

  • 8 ounces cream cheese
  • 8 tablespoons butter
  • ¼ cup sour cream
  • ¼ cup erythritol
  • ¼ teaspoon liquid Stevia
  • 1 teaspoon vanilla

To Get Started:

Begin with a package of cream cheese, 8 tablespoons of butter, quarter cup of sour cream, erythritol, keto friendly sweetener, vanilla, baking powder, cocoa powder, coconut milk, psyllium husk powder, three eggs, and almond flour.

Measure all dry ingredients together into the bowl and melt together a quarter cup of sour cream, butter and eggs which will be added and then blended into the dry ingredients.

Add in 2 to 4 tablespoons of coconut milk and spread the batter over a cookie sheet or parchment paper.

Bake the batter you've created for 12 to 15 min. at 350° to make a long and flat cake in a traditional flat pan.

To make the filling you just need to combine together 8 ounces of cream cheese, 8 tablespoons of butter, quarter cup of sour cream, half a cup of erythritol, keto friendly sweetener and vanilla. Cream together these items until they form a with consistency and then they can be rolled into the cake after it's had time to cool.

Keep some of these amazing desserts in mind when you are interested in getting something sweet on your birthday or presenting someone with an excellent birthday desert while on the keto diet!
