Ingredients:

Cookie Crumbs

  • ¾ cup almond flour
  • ¼ cup cocoa powder
  • ¼ teaspoon baking soda
  • ¼ cup erythritol
  • ½ teaspoon vanilla extract
  • 1 ½ tablespoon coconut oil, softened
  • 1 large egg, room temperature
  • Pinch of salt

Ice Cream

  • 2 ½ cups whipping cream
  • 1 tablespoon vanilla extract
  • ½ cup erythritol
  • ½ cup almond milk, unsweetened

To Get Started:

You will need a pinch of salt, a keto friendly sweetener of your choice, baking soda, almond flour, egg, cocoa powder, vanilla extract and coconut oil. Almond milk and whipping cream will be required for the ice cream portion.

Start by preheating your oven to 300°F and line a typical 9 inch cake pan with parchment paper. Sift out the flour baking soda, sweetener, erythritol and salt into a medium bowl.
