Keto Friendly Blueberry Cheesecake Pancakes

Eating a carb heavy breakfast is simply not something that you can do on the Ketogenic diet. The good news is that there are breakfast items available that can bring on the same flavors you would get from a carb heavy breakfast but without cheating on your diet. A large stack of pancakes with blueberries is something that you can include in your meal prep and a delightful treat to add as part of your keto breakfasts.

To make blueberry cheesecake pancakes, you'll need to start with cream cheese, Keto bark, wild blueberries and eggs. A tablespoon of coconut flour is also required. This recipe is filled with extra proteins, calcium and saturated fat so that you can have a quality start to your day with energy and fat burning.

The Recipe:

    • Start with 2 whole eggs
    • 2 oz of cream chees
    • 1 teaspoon of keto friendly sweetener
    • 1 scoop of Keto Bark
    • 1 tbsp of coconut flour
    • ¼ teaspoon of baking powder
    • 2 tablespoons of blueberries
    • A small pinch of salt
    • ½ teaspoon of vanilla extract

Combine all of the ingredients except for the blueberries in a medium bowl and whisk them until they are smooth. Stir in your blueberries.

Preheat your skillet under medium heat and use butter, ghee or coconut oil for non stick spray. Cook each pancake for 3 min. per side and serve with sugar-free maple syrup or peanut butter.
