Ingredients:

- 1 cup heavy whipping cream
- 1/3 cup erythritol
- 3 large egg yolks
- ½ teaspoon vanilla extract
- 1/8 teaspoon xanthan gum
- 1 tablespoon vodka*
- 1 cup strawberries
To Get Started:
This recipe includes eggs, heavy whipped cream, keto sweetener, a tablespoon of vodka, vanilla extract xanthan gum, and 1 cup of fresh strawberries.
Let a pot simmer on the stove and dissolve the heavy cream and sweetener together. Make sure that the cream doesn't come to a boil.
Separate the three egg yolks from their whites in a bowl. Beat the yokes with an electric mixer and add a few teaspoons of hot cream to make sure that the eggs can temper.
Warm up the mixture and blend it constantly into the cream mixture whilst adding the vanilla over time. Chill the cream down and purée the strawberries stirring them into the mixture before adding them back in the freezer to set.
