Keto Friendly Strawberry Swirl

 

A strawberry swirl ice cream could be the perfect option to handle your fruity and sweet cravings at the same time. It is a richly flavored ice cream that has just a fraction of the cards of traditional ice cream.

The main ingredient for this ice cream is eggs. The eggs inside can deliver excellent proteins including a richness with vitamin B12, selenium, vitamin D, B6 and B12. Eggs also contain high trace amounts of iron, copper and zinc.

 

Ingredients:

  • 1 cup heavy whipping cream
  • 1/3 cup erythritol
  • 3 large egg yolks
  • ½ teaspoon vanilla extract
  • 1/8 teaspoon xanthan gum
  • 1 tablespoon vodka*
  • 1 cup strawberries

 

To get started with this recipe you will need eggs, heavy whipped cream, keto sweetener, a tablespoon of vodka, vanilla extrct xanthan gum, and 1 cup of fresh strawberries.

Let a pot simmer on the stove and dissolve in the heavy cream and sweetener together. Make sure that the cream doesn't come to a boil and separate the three egg yolks from their whites in a bowl. Beat the yokes with an electric mixer and add a few teaspoons of hot cream to make sure that the eggs can temper.

Warm up the mixture and then blend it constantly into the cream mixture slowly adding vanilla over time. Chill the cream down and purée the strawberries stirring them into the mixture before adding them back in the freezer to set.
