If you have an upcoming summer birthday or a friend with a birthday in the summertime, a popular choice around this time of year is a sweeter treat like popsicles or a sorbet. Putting together a variety of flavors from the summer can be a great way that you can toast to a summer birthday. This fresh sorbet is the perfect answer.
The sorbet is mostly produced using avocados and these have some incredible benefits to the ketogenic diet as mentioned in our previous recipe.
Other benefits can come from the ingredients like the limes which are used for flavor in this recipe. Lines have been shown to have a number of different benefits for our skin with their heavy antioxidants. Lines can also work to improve digestion, help with weight loss and a series of blood sugar issues as well. Regularly including lines in your diet can actively work to reduce your risk for cancer.
- 2 medium Hass Avocados
- ¼ cup erythritol, powdered
- 2 medium limes, juiced & zested
- 1 cup coconut milk
- ¼ teaspoon liquid Stevia
- ½ cup cilantro, chopped
To Get Started:
You will need 2 avocados, powdered erythritol, 2 medium-size lines, a cup of coconut milk, keto friendly sweetener and chopped cilantro.
Start by chopping the avocados in half and remove the pits. You can slice the avocados in half and then store them in the freezer for at least three hours to produce the consistency that you want for this recipe.
Powder up the erythritol and make sure it is roughly the same consistency as icing sugar.
Heat up the coconut milk to a complete boil and start testing the two limes. Let the milk continue to reduce and then mix in the lime zest. Place the coconut milk mixture into the freezer to let it cool down completely.
Chop up the salon trail and remove the avocados from the freezer. At this point the lime juice should also be completely frozen. Add together all of the ingredients into a food processor and pulse until it's a consistent blend. This is when you can add in the keto friendly sweetener. As soon as the sweetener has been added you can enjoy the sorbet and it should be the correct consistency!
