Peanut butter bark (Low Carb, Keto friendly and Vegan)
Peanut Butter Bark
This is a very simple recipe that you can use to help satisfy some of your cravings for sweets. Peanut butter flavored bark with a light chocolate drizzle can be the perfect pick me up snack for energy as well as a wonderful way to reduce your cravings.
The best part about this recipe is it requires only a few minutes to make and little to no cooking skills. It’s a healthy snack that is full of protein and healthy fats from the peanuts. You can also get a variety of heart healthy nutrients from the dark chocolate. With the naturally sweet ingredients, you can finally have a snack that can satisfy your cravings and without an excessive amount of sugar. Choosing a sweetener like Stevia can be a great way that you can make this dish and have a natural sweetness in the bark. Himalayan pink salt can also contrast the flavors with an extra crunch and a salty flavor against the sweetness too!
The bark takes 30 minutes to make over time and just a few minutes to make up.
To Make The Bark:
- Start with ¼ cup of natural peanut butter which is mostly crunchy peanuts and salt.
- ¼ cup of coconut oil
- 1 tsp of vanilla
- A small pinch of stevia powder
- 1 full cup of chopped walnuts
- A pinch of Himalayan pink salt
To Make The Chocolate Drizzle:
- Grab 1 oz of at least 85% dark chocolate
- 1 tsp of coconut oil
Line up 2 plates with parchment paper to serve as the area your bark will cure.
Melt your coconut oil and peanut butter in a bowl for around 30 seconds in the microwave.
Add together the rest of the ingredients and stir them together. You can taste the mixture and add stevia or salt as needed.
Pour half of the mixture out onto each plate.
Make up the drizzle by melting the coconut oil and chocolate together for 20 seconds in the microwave. You can then use a spoon to drizzle the chocolate onto the bark.
Freeze the bark on the plates for 30 minutes and you can transfer it over to the fridge to enjoy it at your leisure!
This is a fantastic recipe for helping you overcome some of your sweets cravings as you stick to the ketogenic diet.
