Butterscotch Sea Salt Ice Cream

A keto butterscotch and sea salt ice cream is the treat everybody wants to try!

One of the main ingredients with this recipe is coconut milk. It's an extremely healthy choice as it works to lower cholesterol levels and comes packed with vitamins C, B1, B3, B5 and B6 as well as a host of minerals.


  • 1 cup coconut milk
  • ¼ cup sour cream
  • ¼ cup heavy whipping cream
  • 3 tablespoons butter, browned
  • 2 tablespoons vodka
  • 2 teaspoons butterscotch flavoring
  • 25 drops liquid Stevia
  • 2 tablespoons erythritol
  • ½ teaspoon xanthan gum
  • 1 teaspoon flaked sea salt


To get started with this recipe you will need butterscotch flavoring, keto friendly sweetener, xanthan gum, 2 tablespoons of vodka, a quarter cup of sour cream, a quarter cup of whipping cream, 3 tablespoons of butter and flaked sea salt as well as the coconut milk.

Start by adding in sour cream, heavy cream, butterscotch flavoring, gum, the coconut milk and a sweetener together in a blender.

Brown the butter in a pan until it reaches a dark orange color.

Add the butter into the base of your ice cream in the blender and consider adding in chopped walnuts if you would like to have some extra crunch. Place the mixture into the freezer and letting it stand for at least a whole hour.

After the ice cream has set you can serve it as a great alternative to regular butterscotch ice cream.
