Slow Cooker Zuppa Toscana Soup

 

Zuppa Toscana soup is a popular dish at many restaurants and it can be surprisingly hearty as well as Keto friendly. This low carb recipe is a great way that you can enjoy a fall dish at any time. It will soothe your stomach as well as help you to enjoy a heavier meal in a low carb variety. If you are craving carbs or a heavier meal, this is a soup that will not disappoint.

The kale in this soup comes with a large amount of protein, a variety of vitamins including A,C and K as well as Folate and vitamin B which can be perfect for improving brain functions.

The cauliflower in the soup can also provide benefits like heavy potassium and folate as well as Vitamin B, choline and more. Cauliflower is an item that you need to keep within your regular rotation of foods on keto as it can be a very filling option.

 

Ingredients:

  • 1 pound of Italian ground sausage
  • 1 tablespoon of coconut oil
  • ½ cup of diced onions
  • 3 garlic cloves minced
  • A full 36 ounces of veggie or chicken stock
  • A full cauliflower head diced up into bite sized florets
  • 3 full cups of chopped kale
  • ¼ teaspoon of crushed red pepper flakes
  • 1 teaspoon of salt
  • ½ teaspoon of pepper
  • ½ cup of heavy cream

 

To Begin:

Start by browning the sausage into a skillet on medium heat until it is completely done.

Remove the sausage from the skillet and place it into a slow cooker. Attempt to discard as much grease as possible.

Saute the vegetables in oil within the same skillet until the onions become clear. (3-4 min)

Add the vegetables and the soup stock together in the slow cooker with the cauliflower, kale, red pepper flakes, pepper and salt. Mix everything together.

Cook the mixture on high for 4 hours on high or 8 hours on low.

Add in a heavy cream to produce a thicker soup and mix it in until it is completely combined.

Serve the soup hot and enjoy a huge energy boost!
